Wow, so many pelts!
Let's start with the average Cat, take a look at your cat if you got one, and if you have 2, Great! Take a look at them both and look at the details and the differances. I have 2 Mixes at my house and boy are they differant! Ones a tortishell and they other, well, she's grey with some white on her chin chest belly and boots with mittens. Look at these cats,

Kitty Offspring
The differances in a cats pelt is due to what there parents look like obviously, if they're parent kitties are both a silver tabby, it is most likely to be a silver tabby kitten. But, there is a slim chance of the kitten to be differant colors, but only slim chances.
Parent to kitten differances
If 2 differant cats mix, the kitten could either look like one of them comlpletely, a little of both, or neither of them! A kitten could take it's looks from a past cat, like a grandkitty, if one of the parents is a mix, the kitten could take it's looks from one of it's parents' parents.
See how in this picture, there are 2 light orange tabby with white on them, and a black kitten, while during all this, their mother is a calico cat.

Under the Fur
Kitties Don't only have color on their Fur, but on their skin too. Cats have the same color design on their skin as they do on their fur. A calico would have splotches, tabby would have tabby stripes, and tortishell would be, you guessed it, tortishell. Now look at a Furless cat, even though they have no fur, they still have colored skin, this is because a cat gets it's design from it's skin, not vise versa. These kitties may look like they have larger eyes than the average kitty, but this is only because cats with fur, have fur covering up some of their eyes.
